What is the difference between ceremonial grade and culinary grade matcha?

Ceremonial grade comes from the youngest first-harvest leaves, stone-milled to roughly 5–10 microns, and is meant to be whisked with water and drunk on its own — sweeter, brighter green, more delicate. Culinary grade uses later harvests, has a stronger and more astringent profile, and is formulated to hold flavour and colour against milk, sugar, heat or batter. For a café latte programme, a well-made culinary or latte grade usually outperforms ceremonial, because ceremonial matcha's subtlety disappears behind milk. Buying ceremonial grade for lattes is the most common and most expensive mistake new cafés make.

Can Chinese matcha match Japanese matcha in quality?

For culinary and latte applications the gap has largely closed — Chinese producers now use shading, steaming and stone-milling comparable to Japanese practice, at a materially lower landed cost. For high-end ceremonial usucha, Japanese single-cultivar matcha from Uji or Nishio still holds an edge in umami depth and cultivar heritage. The practical answer for most overseas buyers is split sourcing: Chinese matcha for the high-volume drink base where cost per serving decides margin, Japanese matcha for a premium hero SKU where provenance is part of the story.

What documentation do I need to import Chinese tea or matcha into the EU, UK or US?

Expect a commercial invoice and packing list, a certificate of origin, a phytosanitary or health certificate depending on destination, and a pesticide residue test report from an accredited laboratory. The EU applies a large multi-residue screen to tea and enforces maximum residue limits strictly — an EU-scope residue report is the single document that most often blocks a shipment. The UK follows a broadly equivalent regime post-Brexit. The US requires FDA prior notice and FSVP compliance. Ask for a residue report scoped to your destination market before you place the order, not after the container is loaded.

What is a realistic minimum order quantity for private-label matcha or tea?

The tea itself is rarely the constraint — packaging is. Printed tins, custom pouches and printed cartons carry their own print-run minimums, and that sets the floor for a private-label order. A workable sequence: buy a small paid sample set, run it in your actual application, commit to a first production run using stock packaging with a branded label, then move to fully custom packaging once reorder velocity is proven. This keeps first-order cash exposure low while still producing a sellable, branded product.

How should a café choose a matcha for its latte programme?

Test in the drink you will actually sell, not in water. Prepare each candidate at your real dose, with your real milk and your real sweetener, at your real serving temperature, and judge four things: colour stability after five minutes, bitterness behind milk, whether it clumps when mixed at speed, and cost per serving at your pour size. A matcha that tastes exceptional whisked with water can look dull and taste flat in an oat latte. Application testing before the purchase order is cheaper than a pallet you cannot sell.
