What a café-grade matcha actually needs.

For milk-based drinks, the spec that protects your cup is colour stability, smooth umami, and clean dissolution - not the word "ceremonial" on the bag.

Colour in milk

Request a bright, stable green when whisked into steamed or cold milk. Ask for the particle size and tencha-base information so the result is repeatable, not luck.

No clumps, no grit

A fine, even grind dissolves cleanly in a shaker or with a small whisk. Request dissolution notes and compare against your current benchmark in the same recipe.

Menu ideas that sell

Start with an iced and hot matcha latte, then extend to a matcha lemonade or a matcha-ccino. A single grade that performs in both milk and citrus keeps inventory and training simple.

Batch consistency

Confirm the lot is documented and repeatable. A café program lives or dies on the second and tenth delivery tasting like the first, so ask how grade and spec are held across orders.

Evaluate the matcha in your real recipe - same milk, same ice, same dose - before you set a par stock. That turns a tasting into a buying decision.
